Gluten-Free Almond Butter Flax Muffins & Laguna Beach lovin’

I’m on a planeeee–destination: EBAY, Laguna Beach. Salt in the air sand in my hair–and loving every second of it. The beach is my paradise-whenever someone tells me to go to my happy place I go here :

Who wouldn’t right?? My in-laws are the besttt!!!! They let me stay at their beautiful beach house upon lots of other things–I really appreciate you sharing your happy place with me – love you guys!! so beyond blessed.

For the rest of the week I will be hanging out with my twinnn(love her), her beau (Mitchell), and one of my closest friends Cait–it’s going to be a good time!! Feel free to join us on a crystal cove running session, barre workout, copious amounts of rose cafe & haute cakes, shopping & of course a few cocktail hours!

on a side note–I’m on a personal mission to find an Acai bowl that compares to the besttt one I’ve had to date-(Xoom Juice) in Tucson, AZ. haha UofA did have it’s perks :] Anybody have any suggestions in So. Cal.???

I do feel kinda bad about leaving my little sickling of a husband behind but I made some treats that will hopefully keep him happy & feeling better! My almond-butter, flax muffins! — love you lovey!! xoxo

GF Almond Butter Flax Muffins:

1 1/2 cups GF quick cooking oats

2 tbsp light agave syrup

2 tbsp ground flax seed

1 tsp baking powder

1/2 tsp kosher salt

1 tsp ground cinnamon

1 tsp vanilla extract

1/2 tsp almond extract

1/2 cup almond milk (or reg. milk)

1 large egg (lightly beaten)

1 large smashed banana

1/4 cup almond butter

1/4 cup unsweetened coconut flakes (optional)–you can also add chopped nuts or chocolate chips if you’re really going for it.

Preheat the over to 350 degrees. Mix together the oats, baking powder, ground flax, salt, & cinnamon. Add in the agave nectar, vanilla & almond extract, milk and egg. Mix the ingredients together in standing mixer or handheld mixer. Then add in mashed banana, almond butter, & other yummy ingredients. Combine & bake.

I pour the mixture evenly into a greased cupcake tin for 20 minutes (I use an ice cream scooper to make them even). You can also pour mixture into a 8 x 8 in. baking pan and cut into equal squares. I usually re-heat the muffins and add some almond butter or just grab one for the go. Hope you enjoy!!
