I think it is safe to say that I have a slight obsession with pizza this week — but this is too good to not share with all of you.
It’s what I call the PizzaSalad — fresh pizza ingredients & a peppery bite from the arugula salad – it’s def. a go!
Here is what you’ll need for this refreshing PizzaSalad combo:
1 (GF) Brown Rice Pizza Dough (or any pizza dough you likey)
1 clove garlic, minced
1 – 1/2 tbsp grapeseed oil
1 – 2 tbsp. grated parmesan cheese
1 tbsp. shredded mozzarella
1/2 tbsp. chopped fresh parsley
crushed red pepper flakes
1 handful arugula
1/4 avocado diced
salt & pepper
Optional – I added some little turkey meatballs that I made for turkey burgers to add some protein. (add any meat you desire, but this pizza is just as good without it).
Preheat over to 350 degrees. Heat 1 tbsp. grapeseed oil in pan (medium heat) and add 1 garlic clove (minced), let those flavors mingle, 3 minutes — don’t let the garlic burn. Then put garlic & oil mixture onto pizza like you would a pizza sauce. Top with cheese (with what makes you happy),chopped fresh parsley, a sprinkling of crushed red pepper flakes, and juice of 1/2 lemon all over the dough. Pop this into the oven for 15 minutes or until the crust is to your desired crunchiness. While the pizza is baking prepare the arugula salad, mix arugula with juice 1/2 lemon, 1/2 tbsp. EVOO, and season with salt & pepper. Once the pizza is out of the oven, I added my heated turkey meatballs, the arugula salad, and topped it off with some fresh avo.
