Overnight Chia Oats w/ Fresh Fruit

Happy Sunday Funday!!

I hope you all had a wonderful weekend…some of you might even be lucky enough to have President’s day off!! woohooo :] This weekend was filled with TRX workouts, healthy food, and lots & lots of Game of Thrones & Downton Abbey. haha my #1 and I are obsessed with Game of Thrones, and I’m a new fan of the series Downton Abbey. (you guys should watch them)… they are good, great, grand!

I’ve been looking forward to this week for quite some time because I am helping my best friend at the Magic tradeshow in Las Vegas. She is soo talented and I am so excited to help her showcase her amazing jewelry line. Check her site out here Jaeci - her stuff is killer. love.

Soo because I’m going to be on the go this week, I decided to plan ahead and make my breakfast beforehand–plus overnight oats are soo tasty, filling, & energizing.

My Overnight Chia Oats:

1/3 cup almond or flax milk

1/4 cup old fashioned rolled oats

1/4 cup greek yogurt

1 1/2 tsp chia seeds

1 tsp honey or agave nectar

1/2 tsp cinnamon

1/4 cup applesauce

topped with organic coconut flakes, sliced almonds, strawberries, & chopped kiwi!

** put first 6 ingredients into jar. Secure lid & shake to combine. Remove lid, add applesauce and stir well. Top with coconut, almonds, and fruit. Refrigerate overnight, or up to 3 days! Enjoy

Just for happy thoughts here is Nala bear after her bath tonight — haha puppy eyes & all. Love her.

    Sadly, I am about a season behind on Game of Thrones, but I was an avid reader of the books. Can’t wait to read about your TRX workouts, I’ve just discovered this new workout!

Ok, now I feel like I’m the last person on the planet who doesn’t know about Chia seeds :( Yesterday, I just heard somebody else talking about how wonderful these seeds are! :) For me, I like to cook oatmeal porridge in the morning, with a bit of raw organic honey and cinnamon. It’s healthy, tasty, filling and keeps my tummy happy! Vera
