Beach & Soul

Hi all of you beauties!

Hope you are all having a wonderful week. So often, I talk about the importance of nourishing your body with healthy nutrients, so today — we’re going to mix it up and talk about the real stuff – your most beautiful soul. We all need to take the time to nourish our soul because it is a vital piece to the puzzle of our ‘whole being’ and journey in becoming our healthiest, happiest & most beautiful self.

While there are many different ways people nourish their souls, through meditation, walking, writing, and seeing. Nourishment of your soul is to look inwards, reconnecting you to your inner & truer self and is simply found in simplicity. Such as, quiet time alone, being in nature, seeing the innate beauty of our world and journaling, etc.

It’s pretty easy to nourish your soul when your at the beach because you are surrounded by so much of the beauty of God’s creations – birds chirping, dolphins & seals playing, sandy toes and crashing waves. Walking on the beach is one of my favorite things to do – it is so calming & allows me to remain in the present moment – taking in all the simple, yet beautiful beings that surround me.

Rodger’s Garden – another amazing place filled with every & any flower you can possibly imagine. I could walk around these gardens for days and just take in all the incredible flowers, plants, herbs, & trees. I wish I owned a garden like it in my backyard hahaha a girl can dream right? Flowers & all plants are simply beautiful – go see for yourself.

Journaling – I’m a recent member of the journaling party, and I’m so happy I am – journaling allows you to look inward and to feel your emotions, thoughts, and realize what is really going on — on the inside. It relieves so much stress & confusion on ones soul and allows oneself to be aware of what is going on in their present moment. It’s a great method – so go journal it out!

Eating healthy @ the beach – while nourishing your body with healthy foods, I think you are nourishing your soul as well — because you feel better on every level when you are eating nutritious foods. Speaking of eating healthy — I have found my new favorite spot in Laguna — it goes by Active Culture – Natural Foods Cafe & Yogurt. It is amazing and I highly recommend to all of you. I got a brown rice & lentil bowl with veggies & their OG sauce — it was dynamite! def. stop in if you are in Laguna – it won’t disappoint – promise.

Goji Berry 3-Bean Chili

Happy St. Patty’s day party people!

Some of you may know who Dr. Joel Furhman is from his books, documentary appearances, and Dr. Oz — but this guy has got it right when it comes to nutrition (in my eyes). He’s created a new type of diet — the nutritarian lifestyle — and I’m loving it.

Soo this past week, he was sharing some of his favorite recipes and this Goji Berry 3-Bean Chili was a star. So obvi. I had to try it — I wasn’t sure how the goji flavor would combine with cumin and chili powder but it was magical. It was a spicy & sweet flavor combo that I will def. be enjoying for a long time to come…it’s that good.

Recipe from Dr. Oz & Joel Furhman — kudos!

Ingredients:

3 cups diced plum tomatoes or 1 (28-oz) can no-salt-added or low-sodium plum tomatoes

1 lb frozen broccoli, thawed and chopped

10 oz frozen chopped onions, thawed

2 1/2 cups corn, fresh or frozen

1/2 cup goji berries

2 large zucchini, diced

4 oz chopped mild green chilies

4 tsp chili powder, or more to taste

2 tsp cumin

3 cloves garlic, minced

1 1/2 cups cooked pinto beans or 1 (15-oz) can no-salt-added or low-sodium pinto beans, drained

1 1/2 cups cooked black beans or 1 (15-oz) can no-salt-added or low-sodium black beans, drained

1 1/2 cups cooked red beans or 1 (15-oz) can no-salt-added or low-sodium red beans, drained

Directions

Cover and simmer all ingredients, except precooked (or canned) beans, for 20 minutes. Add beans and heat through.

I sprinkled some goji & homemade guacamole for some added crunch & creaminess!!

This Goji Berry Chili is packed with fiber, slowly digestible starches, and phytonutrient-rich greens. An added bonus is the antioxidant filled & flavorful superfood — the Goji Berry — this is the star of the dish in my book!

The great thing about this dish is it is sooo filling and soo tasty — try a pot full of this for your St. Patty’s day din din or for meatless monday :] it’s a win!

The slimming & spicy green juice

Morrrrning loves!

Ever feel like you need that extra kick to get you going in the morning or afternoon — well this green juice will do just that. This spicy concoction will wake that brain right up and make you feel energized & sexy! Plus the jalapeno will kick that metabolism into overdrive — soo drink up ladies & gents it’s good for ya!

Here is what you’ll need:

1 bunch of Kale

1 jalapeno (seeded)

1 cucumber

3 large carrots

1 green apple

1 bunch of parsley

1 bundle of celery

1 lemon

1 lime

** add a tsp of spirulina or chlorella if you really want to dive right into your healthy self.

haha funny story about spirulina — after doing some research, I decided to try this stuff out — it’s amazing how good this stuff is for you — anyways, I opened the bag and I about passed out. haha talk about some algae nostril love — wowzers. After deciding I was about to gulp this stuff down, I added some to my green juice and literally a second later I felt a rush to my head. It kinda freaked me out, I was tingling from this algae stuff. haha I was talking to someone who also enjoys some spirulina and he said that it was my body getting nutrients that it needed and supposedly my body was telling me it was happy about it. hahaaa if you say soo my friend. Anyways, the next time I had it the effect def. diminished… has anyone else experienced that from Spirulina?? haha or am I the only one.
